Vitamin C can multiply how much plant iron you absorb from a meal several times over — but only when it is eaten in the same sitting. Vitamin C at breakfast does nothing for the iron in your dinner. This is the highest-return, lowest-effort change available to anyone with iron deficiency, and it costs the price of a lemon.
Why It Works
Plant iron exists mostly as ferric iron (Fe³⁺), which your intestine absorbs poorly. Vitamin C reduces it to ferrous iron (Fe²⁺), which is absorbed far more readily.
Vitamin C also forms a soluble complex with iron that protects it from phytates and tannins — the compounds in grains, dals and tea that otherwise bind iron and carry it out of the body.
So vitamin C does two jobs at once: it converts iron into a usable form, and it shields it from the blockers.
The Rule
Same meal. Not the same day.
The chemistry happens in your stomach and upper intestine while the food is there. Once the meal has moved on, the opportunity is gone.
Roughly 50 mg of vitamin C — about half a large lemon, or a small guava — is enough to make a substantial difference to a meal.

- Capsicum — higher than most people realise
- Coriander and mint — which is why chutney with a meal is genuinely useful

- Moringa — notable because it contains iron and vitamin C in the same leaf
Heat Destroys Vitamin C
Vitamin C is heat-sensitive and water-soluble. Long boiling destroys much of it, and it leaches into cooking water.
Practical implications:
- Add lemon after cooking, not during. Squeeze it at the table.
- Raw salad, chutney and fresh fruit are the reliable sources
- Coriander added at the end, not with the tadka
- Steam or stir-fry vegetables rather than boiling them at length
Amla is a useful exception — its vitamin C is unusually stable, which is part of why Ayurveda values it so highly.
What to Keep Away From the Same Meal
Vitamin C helps, but it cannot rescue a meal that is full of blockers:
- Tea and coffee — one hour either side
- Milk, curd, paneer, calcium supplements — two hours
- Antacids — you need stomach acid to absorb iron

A Note on Vitamin C Tablets
They work for this purpose. But food sources bring other useful things with them, and very high-dose vitamin C supplements can cause stomach upset and, in susceptible people, contribute to kidney stones.
A lemon costs less and does the job.
