Raw Honey vs Processed Honey: What Heating Actually Destroys

Most supermarket honey has been heated to around 70 degrees and filtered until no pollen remains. Here is exactly what that removes, why it is done, and whether the difference is worth paying for.

Raw honey is extracted, strained and bottled. Processed honey is heated to around 70°C and filtered finely enough to remove pollen — which destroys enzymes, reduces antioxidants, and removes the only thing that could prove where the honey came from. The difference is real. Whether it justifies the price depends on what you are using honey for, and this article is honest about that.

What Processing Involves

Pasteurisation

Honey is heated to roughly 70°C. Producers do this for two commercial reasons: it kills yeast that could ferment the honey, and it delays crystallisation so the product stays liquid and attractive on a shelf for longer.

Neither reason is about your health. Both are about shelf appearance and logistics.

Ultra-filtration

Honey is forced under pressure through very fine filters, removing pollen, wax and air bubbles. The result is perfectly clear, uniform honey.

It also removes the pollen — and pollen is the only thing in honey that identifies its botanical and geographic origin. Once it is gone, nobody can determine where that honey came from. This is why food scientists treat ultra-filtration with suspicion beyond the nutritional question.

What Heat Actually Destroys

Enzymes

Bees add enzymes to nectar to turn it into honey. Three matter:

  • Diastase (amylase) — breaks down starch. Diastase level is used internationally as the standard indicator of whether honey has been over-heated.
  • Invertase — converts sucrose to simpler sugars.
  • Glucose oxidase — produces small amounts of hydrogen peroxide, which is a large part of why honey resists bacteria. Heat-sensitive, and this is the loss that matters most for the traditional wound and throat uses.

Antioxidants

Flavonoids and phenolic acids degrade with heat. Raw honey consistently tests higher for antioxidant activity.

Pollen

Removed by ultra-filtration. Carries trace protein and is the origin marker.

Aroma

The volatile compounds that make eucalyptus honey taste different from mustard honey are driven off by heat. This is why processed honey from different sources all tastes broadly the same.

And what heat creates: HMF

Heating honey produces hydroxymethylfurfural (HMF). It is used internationally as a marker of heat damage and storage age. Fresh raw honey is very low in HMF; heavily processed or old honey is high. Regulatory limits exist for this reason.

Where raw honey genuinely matters:

  • Taking it for a sore throat or cough — glucose oxidase and the peroxide activity are heat-sensitive
  • Any topical or wound use — same reason
  • Taste. This is not a small thing. Raw varietal honey tastes of something specific.
  • Knowing where your food comes from

Where it honestly does not matter much:

  • Baking. You are about to heat it to 180°C. The enzymes are going regardless. Use the cheaper honey.
  • Stirring into boiling tea. Same. If you want the benefit, let the tea cool below about 40°C first — which is worth doing, and costs nothing.

How to Store Raw Honey

  • Room temperature, away from sunlight. Never the fridge — cold accelerates crystallisation.
  • Glass jar, lid closed. Honey absorbs moisture from the air, and moisture is what allows fermentation.
  • Dry spoon only. A wet spoon introduces water.
  • To decrystallise: stand the jar in warm water. Never the microwave — it creates hot spots that destroy exactly what you paid for.

Honey does not expire. Edible honey has been recovered from Egyptian tombs.

Frequently Asked Questions

Is raw honey safe?

For everyone over one year old, yes. Never give honey — raw or processed — to an infant under 12 months, because of the risk of infant botulism.

Why is my raw honey cloudy?

Pollen, wax particles and air bubbles. All signs of minimal processing.

Does raw honey help allergies?

The local-pollen theory is popular but poorly supported — the pollen causing hay fever is wind-borne, and bees mostly collect heavier flower pollen. Do not buy honey for this reason.

Is organic honey the same as raw?

No. Organic refers to the forage area and beekeeping practice. Raw refers to processing. Honey can be one, both or neither.

Can I heat raw honey at all?

Gently. Below 40°C keeps most of it intact. Above 60°C you have processed honey.
